ELABORATION: By selecting the best grapes of this variety located on the plots of the middle and upper area of our property, we produce, with cultivars tread and on a semi-deep soil, clayey-calcareous texture with good mineral composition and with a minimum age between 18 and 22 years.
The grapes are harvested manually, with a slight over-ripening and in perfect health. Once in the winery, it is cooled to 8º C., thus increasing its characteristic varietal aroma and then initiating its fermentation with contact with the own skin for 10 days. Once it is defrosted, the malolactic fermentation begins and afterwards it is transferred to new tanks where the bottling is left to rest. Being a very delicate production to obtain the maximum varietal character, this wine has not been filtered, with which it may have a slight sedimentation in the bottle, from its own coloring matter.
TASTING NOTES: Deep red with violet hues, its aroma is of jams of berries and red fruits. In the mouth it is soft, elegant, slightly acidic, with live tannins and good structure. Its passage reminds us of the variety that comes from.
