ELABORATION: Wine made exclusively on the property “Les Torres”, of our property. Varieties grown on a semi-deep, clayey-calcareous soil with a good mineral composition have a minimum age of 15 years.
The grapes are harvested manually in boxes of 12 kg, at the optimum point of ripeness and in perfect sanitary condition, and once in the winery, it is cooled to 4 ° C, in order to maximize its aromatic characteristics and begin its fermentation in contact with its own skin and thus achieving a greater structure. At a density of 1050, the must is fermented and the fermentation is continued in stainless steel tanks with temperature control, never exceeding 16ºC.
TASTING NOTES: Bright yellow in color with ripe white fruit (apple and pear) and mountain grass (fennel and thyme). The palate is soft, slightly acidic, fresh and with good structure. Long, intense and robust.
