Celler de SANUI is a modern, well-equipped winery that is distributed in two well-differentiated parts. On the one hand, there is the area of ​​wine production and treatment of grapes. On the other hand, there is the storage and aging of the various products we produce. There is a third part that is used exclusively for bottling.


Grapes are harvest by hand and in boxes of 12 Kg. To reach the winery in the best way, it is equipped with the specific machinery to obtain quality musts and retain all their physical and chemical characteristics. The elaboration, with stainless steel vats with cooling shirts and automated maceration systems, allow us to ferment white wines at temperatures between 14 and 16º C and red wines up to a maximum of 24º C. There are also some wine storage tanks.


The breeding area, located in another ship, is below ground level in order to facilitate the best conservation and temperature of the room. It is air-conditioned and with temperature and humidity control to ensure better stability of the wine. wine. Here we will find stainless steel vats to keep the young, white and red wines, as well as the barrels of aging of French and American oak. They have different capacities and several toasted interiors, in order to be able to combine the best aging of each one of the varieties that we grow and achieve in this way, the best characteristics of each of them. After this period of aging, the oenologist will combine to achieve the personality and characteristics of the wines of SANUI.
