ELABORATION: Wine made exclusively on the “Les Torres” estate, which we own. Its vines are grown in the upper part, with a south-west orientation, trellised and on a semi-deep soil, with a clay-calcareous texture, with good mineral composition and well aerated. They have a minimum age of between 16 and 19 years.
The grapes, harvested separately and slightly overripened by hand and in perfect health, are quickly transferred to the winery in 1000 kg hoppers. Once de-stemmed, it goes to stainless steel tanks, fermenting separately at a maximum temperature of 22º C. and macerating between 18 and 22 days depending on each variety. It is racked and then the malolactic fermentation begins.
After this, these varietal wines begin their aging in French Allier oak and American oak barrels; the first 230 liters and the second 300 liters.
After a stay of 5 months in these barrels, the “coupage” was made and it will continue to age in those same barrels until a maximum of 8,000 hours have been completed.
After this time, it is racked again and after a slight filtration it is bottled and it will continue to rest in them for a minimum of 6 months in order to achieve its personality and balance.
TASTING NOTES: Intense ruby color, its delicate aroma of ripe red fruits and the cherry compote that marks the ripeness of the grape. In the mouth it is intense, powerful, good acidity, well structured and with a good balance of the woods in which it has remained. Silky, harmonious and very long aftertaste.
