ELABORATION: Wine made exclusively on the “Les Torres” estate, which we own. The vines selected for their elaboration are grown at an altitude of 270 m., In trellis on a semi-deep soil, with a clay-calcareous texture and with a good mineral composition, they are at least 15 years old.
When the harvest arrives, the grapes are collected separately and manually in 12 kg boxes, with a point of over-ripening and in perfect sanitary condition. Once in the winery, it is refrigerated to 4º C., in order to extract its aromatic characteristics to the maximum during its short maceration, draining the flower must into small stainless steel tanks and starting the fermentation at a temperature of between 10 and 14 ° C. At a Density of 1030, the fermentation is removed and fermentation continues in new 300-liter French Allier oak and American oak barrels, remaining in contact with their own fine lees and batonage until December. After about 8,000 hours in the barrel and with a slight filtration, it is bottled and still rests in this container for 3 months in order to achieve its balance.
Due to its composition and structure, this wine can continue to improve in the bottle, if it is kept in good condition, for the next 3 years, although as a consequence, it may leave a slight sedimentation in the bottle during that period of time.
TASTING NOTES: Intense golden yellow and straw colored, its aroma is of very ripe stone fruit (peach and pear), toasted caramel and pastry. On the palate it is meaty, structured, with good acidity and good integration of the wood. Long fat and intense aftertaste on the palate.
